As an alternative to the traditional Digestive base, I got the idea of making this cheesecake with a different base when I was at a New Year’s Eve party. I was inspired by a dessert consisting of a nut base with cream and fresh berries, which tasted incredibly, and I immediately thought that it could be a base for one of my cheesecakes. This cheesecake is also what I bake for one of my friends, who has diabetes and cannot eat Digestive biscuits. In the diabetes-friendly version, I also replace the sugar with artificial sweetener.
