The pomegranate is, in my opinion, one of the most overlooked fruits. It is a fruit that has existed for thousands of years, and according to Jewish tradition, there are as many good deeds in life as there are kernels in a pomegranate. According to the legend, there are 613 kernels in a pomegranate. I have still not bothered to actually count the kernels but have instead decided to use this lovely fruit in a cheesecake. The interesting part of this cake is that although the pomegranate kernels have been baked, they still “pop” in your mouth when you eat them – quite a unique sensation!
